Easy vegan pumpkin cake

How to make
1 Bake the pumpkin in advance (to allow it to cool while preparing the cake) for about 30-40 minutes (until soft) at 180 degrees. Pour 1-2 cups of water into the pan with the sliced pumpkin slices.
2 Put in dates, oatmeal, optional nuts, coconut and cinnamon in the blender / kitchen robot (or whatever appliance you have available);.
3 Feel the aroma of the ingredients before blending them. Blend everything (decide how much to bled, it is per personal choice).
4 Then pour the mixture into a cake container with detachable walls and spread evenly.
5 Add the already cooled pumpkin to the blender (the appliance you are using) and blend until mashed. Pour into a separate bowl and add 2 teaspoons of chia seeds. Allow it for 3-4 minutes to swell.
6 Finally spread the orange mixture onto the prepared mixture from step 4. Voilà you have a delicious and healthy pumpkin temptation. You can decorate the cake with fruits or nuts of your choice.

- I used walnuts and combination of cinnamon, coconut shavings and dates and it turn out amazing!
- If you use nuts, it is advisable to soak them beforehand according to the type;
