Easy vegan tomato soup
25 mins
Easy
Ingredients
1 kg tomatoes
1 onion
Olive oil
1 tsp red pepper
Salt on taste
2 tbsp. flour (whole grains or whatever you have available)
How to make
1 Cut the onion into small pieces. Cover the bottom of the pan with oil / butter and add the onion and some water. Leave the onion to soften. Add 2 tablespoons of flour and 1 teaspoon of red pepper. Then, add about 2 cups of water. Let the ingredients boil.
2 During this time, thoroughly wash the tomatoes, cut them into pieces and put them into the blender. Grind them for a few seconds, but make sure to leave some small pieces.
3 Once your ingredients are boiling, add the tomatoes and salt (if desired). Simmer until the soup has thickened.
Consume it warmly and with love.
Good to know
- You can buy a ready-made “mixture” of tomatoes for your soup, but I personally prefer to take fresh (and soft) tomatoes and grind them in a blender;
- You can add black pepper when serving and replace the red with hot pepper, depends from your taste;
- You can slice and add a red pepper, for example;
- This easy tomato soup is a great and easy choice for dinner, especially during the summer days. It is a good combination with this bread (#) and this delicious chickpeas falafels.
