Vegan baked chickpeas falafels
Timings:
- 12-24h soaking chickpeas;
- 20 min preparation;
- 1h to chill in the fridge;
- 30 – 40 min cooking;

How to make
1 Put the chickpeas to soak in cold water on night before. On the next day if you wish to keep it in water for a little while longer, make sure to change the water.
2 Wash the chickpeas, put it in the blender and grind it.
3 Add the onion to the blender (make sure to chop it into small pieces before that), then the garlic (also crushed into small pieces), and the parsley (make sure to wash it well). Blend the mixture for few seconds.
4 Time to add the spices – add the salt (per personal taste), half tsp. coriander, 1 tsp baking soda, 2 tbsp flour, 1 tsp hot pepper (or more if you’re a fan of the “spicy foods”), half a teaspoon caraway, 1-2 tbsp olive oil (per personal taste). Blend the mixture for few seconds.
5 Pour the mixture from the blender into a large bowl and mix the ingredients well.
6 The next step is to cover the bowl with household foil (or if you have a lid for the appropriate size) and put the mixture in the refrigerator. It takes 1 hour to tighten (time to watch your favorite TV-series).
7 Prepare a clean pan and cover it with baking paper (or a substitute if you have one). Turn the oven to 200°C. Take out the mixture from the fridge. Wash your hands and start to make small ball-shapes from the mixture arranging them in the pan.
Note: you should be able to create up to 15-20 balls from the mixture (depends how much chickpeas you have used).
8 Pour a few drops of butter/olive oil on the falafel balls and put the pan into the oven. Bake it for 20-30 mins at 200°C until they achieve a nice golden tan.
